Dal Pakwan Recipe By Varun Inamdar


For 3 Pakwan

  • 1.5 cups Golden Harvest All purpose flour
  • 1.5 cups Golden Harvest Wheat flour
  • 1 tsp Golden Harvest Salt
  • Water or as required
  • 2 tsp Fresh and Pure Oil
Flavours for Pakwan

  • 2 tsp Golden Harvest Ajwain + 1 tbsp Golden Harvest Crushed Kasuri methi
  • 2 tsp Golden Harvest Cumin + 1 cup Spinach puree
  • 2 tsp Golden Harvest Crushed Black pepper + 1/4 cup Mint puree
For making dal:

  • 1.25 cup Golden Harvest Chana dal cooked
  • Water as required
  • 2 green chilies, slit
  • 8 to 10 curry leaves
  • 1 tsp Golden Harvest Cumin seeds
  • 1 pinch Golden Harvest Asafoetida
  • ½ tsp Golden harvest Turmeric powder
  • ½ tsp Golden Harvest Red chili powder
  • 1 tsp Dry Mango powder
  • ¼ tsp Golden Harvest Garam masala powder
  • Golden Harvest Sugar as required
  • Golden Harvest Salt as required
  • 2 tbsp Coriander leaves
  • 2 tbsp Fresh and Pure Ghee

For Dal
  • Heat ghee in a pan and give tempering of cumin seeds, Hing, curry leaves, turmeric powder, red chili powder sauté for a minute then add the cooked Dal and water boil for 4-5 mins.
  • Now add dry mongo powder, haram masala, salt, sugar boil for a minute garnish with chopped coriander leaves.
For Pakwan
  • Mix all the ingredients in a mixing bowl as per your flavor
  • Knead to a semi soft dough.
  • Make small balls of the dough.
  • Roll them into 7-8 cms discs or circles.
  • Prick with a fork.
  • Fry in hot oil till the pakwans are crisp and golden.
  • Drain the pakwans on paper towels to remove excess oil.
  • Serve pakwan warm Dal.
