Kofta Biryani

Ingredients

For Koftas

  • 2 nos Potatoes, Boiled
  • 1/2 cup Carrots, Cubed
  • 1/2 cup Cauliflower, Florets
  • 1/4 cup Premium Harvest Peas
  • 1 tbsp Coriander Leaves
  • 1/4 cup Bread Crumbs
  • 1 tbsp Golden Harvest Coriander Powder
  • Golden Harvest Salt as per taste
  • 2 tbsp Fresh & Pure Oil
  • 1 tbsp Golden Harvest Garam Masala Powder

For Gravy

  • 2 nos Tomatoes
  • 1 tbsp Garlic
  • 1/4 cup Karmiq/ Golden Harvest Cashew Nuts
  • 1/4 cup Curd
  • 2 nos Golden Harvest Bay Leaf
  • 1 tbsp Golden Harvest Garam Masala Powder
  • Golden Harvest Salt as per taste
  • 1 tsp Golden Harvest Sugar

For Rice

  • 2 cups Golden Harvest Basmati Rice (Soaked)
  • 1 tsp Golden Harvest Garam Masala Powder
  • A pinch Of Karmiq Saffron

For Garnishing

  • 1 cup Fried Onions
  • 1 tbsp Mint Leaves
  • 2 tbsp Pomegranate Seeds For Extra/ Optional
  • 1 cup Dough
  • 1 big Charcoal

Method

  • In a large pan add water, garam masala, saffron and bring it to a boil, then add the soaked rice and cook it till 80% and keep it aside.
  • In a blender add cauliflower, peas, carrots and pulse it one's or twice.
  • Now in a bowl add the boiled and mashed potatoes, the vegetable mixture, coriander leaves, salt, garam masala, coriander powder and bread crumbs. Bring this mixture together and give them your desired shape.
  • Then fry it in the pan until it gets golden brown and keep it aside.
  • Make tomatoes and garlic paste in a blender then add it to the hot oil with a bay leaf and suate it well.
  • Now add curd, garam masala, salt, sugar and mix well. Cook it till it's done.

To assemble the BIRYANI

  • In a big kadai, add the gravy and kofta then layer the rice and repeat the layering.
  • Now garnish it with fried onions, mint leaves, pomegranate. Place a hot charcoal in it and add little ghee to it, cover with the lid and seal it with the dough.
  • Remove the lid after 15-20 mins and serve it with raita.
